- 1 shallot, minced
- 4 ripe avocados, skinned & pitted
- 2 plum tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp sea salt
- 1-2 Tbs chopped cilantro
- 1 jalapeno, finely chopped
- Juice of a lime
In a medium bowl, toss all the ingredients. Mix gently so to retain some texture. Serve with flax-seed crackers.
