Mix several varieties of mushrooms for optimum flavor and health benefits. Amounts are very flexible, so follow your whims….
About 2 cups mushrooms, sliced
2 tbs. or so butter from grass-fed animals
About 1 tbs. each fresh thyme and oregano, roughly chopped; or, if no choice, 1 tsp. each dried,
though fresh herbs are best
Unrefined sea salt to taste and perhaps a dash of black pepper
Juice from 1/2 lemon or to taste
- Clean and slice mushrooms.
- In a saucepan sauté the mushrooms in butter for about 2 minutes, stirring lightly.
- Add chopped herbs and continue to cook 4-5 minutes more, stirring occasionally.
- When the liquid is more or less cooked out, turn off the heat. Season with salt/pepper and stir in fresh lemon juice.
Serve as a side dish for meat or fish or over rice or other steamed veggies.
